Biography:

Dr. Bryon Wiegand is a native of Cairo, Missouri with earned degrees from the University of Missouri – Columbia (B.S.), Auburn University (M.S.), and Iowa State University (Ph.D.) in Animal Science, Animal Breeding, and Meat Science, respectively. For seven years, Bryon was a member of the faculty at Illinois State University, where he served in a teaching/research role in swine management and meat science. He also coordinated the graduate program and the internship program for the Department of Agriculture.

Bryon joined the faculty at the University of Missouri, Division of Animal Science on July 1, 2007 in a research and teaching role. His courses include Live Animal and Meat Evaluation and Physiology and Biochemistry of Muscle as a Food. Bryon’s research interests focus on improving the eating quality of red meats, specifically beef and pork. He has concentrated on changing the lipid profile of red meat through nutrition and processing to change flavor and color attributes of the final product. Bryon’s other responsibilities within the Division include serving as liaison to the Missouri Association of Meat Processors, coordinator of the University of Missouri Meat Processing Pilot Plant, coach to the University of Missouri Meats Judging Team , and member of the Division Academic Affairs Committee.

Bryon is an owner in a diversified farming operation, Wiegand Bros., LLC, in Randolph and Macon counties in North Central Missouri where he raises commercial cattle, corn, soybeans, and wheat. He is married to Teresa, also a Missouri native, and they have two daughters, Quincy and Avery.
